Perfect Every Time Cut-Out Cookies

3 cups unbleached, all-purpose flour
2 teaspoons baking powder
1 cup sugar (I use sugar that I've stored vanilla beans in)
1 cup (salted) butter, cold & cut into chunks
1 egg
3/4 tsp pure vanilla extract
1/2 tsp pure almond extract

Instructions:

Preheat oven to 350.

Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg and extracts and mix. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.

The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling.

Roll on a floured surface to about 1/4" to 3/8" thick, and cut into shapes. Place on parchment-lined baking sheets (I recommend freezing the cut out shapes on the baking sheet for 5 minutes before baking) and bake for 10-12 minutes. Let sit a few minutes on the sheet, then transfer to a cooling rack.

Cancer, bleeeeccch!...I HATE that word...hate it more than any other, I think. If I see it in an article, on TV, on the radio...the magazine is shut, channel changed, radio turned off. My plan from now on is, when I hear the word cancer, immediately think, "Livestrong."

One of my favorite pictures of my mom!

These cookies are a tribute to my mom who we lost to cancer eight years ago. They were her favorite flower and yellow her favorite color, so I think this event would have been right up her alley. This is honestly the first time I've cried making cookies.

If I let myself go, I'll have a page and a half blog post, so I'll just say, I had a good mom. She was a redhead, drank beer, made homemade cinnamon rolls and really loved life. She and my dad were married 32 years. My mom wasn't ready to leave us, but when I find a random penny or a cardinal flies across my path, I know she hasn't really.

So, these roses are for Gayle (mom), for my friend Laura who has been battling brain cancer for NINE years now, for Kelly, for big Jack, for my Uncle Ben, for my papa who used to call me "ol' yellow hair" when I was a kid (and would now have to call me "ol' reddish-brown-with-highlights-and-a-few-sprigs-of-gray" hair), for Raquel, and for Kenny who I didn't know, but so many people I love miss him, so I know he must have been incredible.

The cookies.....I made this rose template from a file folder, (I like open roses rather than the buds. ) and cut them with a paring knife.


 
Vanilla-Almond Sugar Cookies

Ingredients:

3 c unbleached, all-purpose flour
2 tsp baking powder

Combine the flour and baking powder, set aside. Cream the sugar and butter. Add the egg and extracts and mix. Gradually add the flour mixture and beat just until combined, scraping down the bowl, especially the bottom.

The dough will be crumbly, so knead it together with your hands as you scoop it out of the bowl for rolling (video on University of Cookie).

Roll on a floured surface to about 1/4" to 3/8" thick, and cut into shapes. Place on parchment lined baking sheets (I recommend freezing the cut out shape on the baking sheet for 5 minutes before baking) and bake for 10-12 minutes. Let sit a few minutes on the sheet, then transfer to a cooling rack.

For the Royal Icing...follow the recipe here for my favorite royal icing. When the icing is beginning to reach a stiff peak, add a drop or two of almond extract and beat until still peaks form.

Transfer icing to two separate containers and color (3/4 AmeriColor Egg Yellow, 1/4 AmeriColor Leaf Green). Press plastic wrap down onto the icing.

Using a #2 tip, pipe the outline of the rose in yellow.

Using a #2 tip, pipe the outline of the leaf in green.

Thin both containers of icing with water until they reach the consistency of syrup, cover with a damp dishtowel and let sit several minutes.

Stir the yellow icing gently with a rubber spatula to break any bubbles on the surface and transfer to a squeeze bottle. Fill in the rose with the thinned, flood icing.

Repeat with the green icing, filling in the leaf.

Let dry at least one hour, then using the same #2 tips, pipe the detail on the rose. Let dry completely.

  3. Step 3:

We put a ball of dough in cling film and put it in the refrigerator for half an hour.

  4. Step 4:

    Remove the dough from the refrigerator after the specified time. On a work surface dusted with flour, roll out the dough into a layer no more than one centimeter thick. With a special curly cutting or a glass, we cut out figures or circles from the dough.

  5. Step 5:

    Transfer the biscuits to a greased or parchment-lined baking sheet. If desired, cookies can be sprinkled with sugar or sesame seeds on top. We send the cookies to the oven preheated to 180 degrees for 20 minutes. You need to focus on the work of your oven, the cookies should increase slightly in volume and brown on top.

  6. Step 6:

  • Wheat flour - 320 grams.
  • Margarine for baking - 150 grams.

Preparation:

1. Pour sugar into a clean and dry container (it is better to use a plastic bowl, since sticky dough always easily separates from its walls).

3. Margarine, which has lain at room temperature and has softened by this time, is cut into small pieces. This is necessary so that the sand mixture can quickly and easily transform into ready-made dough. After margarine, pour the sifted wheat flour into a bowl.

4. Knead soft dough. It is not allowed that it sticks, but at the same time, busting with flour is not needed. If the dough is very sticky, of course, it is better to add a little more flour. But it’s better not to overdo it at this step, otherwise the cookies will not turn out soft and crumbly.

5. After a few minutes of kneading, when the mixture reaches a homogeneous consistency, we can say that the dough for the shortcrust pastry is almost ready. To complete the process, roll all the dough into one large ball and send it in a transparent bag or wrap it with cling film. Put the dough bag in the refrigerator. Ideally, if he manages to lie down there for at least half an hour.

6. Remove the dough from the refrigerator and divide it into three or four parts. This is necessary for convenience: it is much easier to roll several small balls than one large one. Roll out the balls one by one into thin layers. The most optimal thickness of the workpiece is considered to be a thickness of 4-8 millimeters.

7. Take cookie cutters and carefully press them into the layer. Separate future cookies from the rest of the dough. Knead the rest a little and roll out again. This step is repeated until the entire mass is finished.

8. Line a baking sheet with baking paper. We do not grease, but immediately lay out blanks for cookies on it. Sprinkle the top of the cookies with a little sugar.

9. We send the baking sheet with cookies to the oven preheated to 200 degrees and bake until done.

How to make sugar cookies from powdered sugar

When making sugar cookies, it is important to follow a few important rules. The first rule is that margarine or butter must first be softened. Secondly, the oil base is whipped with sugar until the grains of this very sugar disappear, which does not always work out. Therefore, experienced housewives advise either sending sugar (according to the recipe rate) to a coffee grinder, or immediately take ready-made powdered sugar, which is easy to beat into a homogeneous mass with butter and margarine.

Ingredients:

  • Powdered sugar - 200 gr.
  • Chicken eggs - 1-2 pcs.
  • Butter - 1 pack (200 gr.).
  • Wheat flour (highest grade) - 3 tbsp.
  • Soda slaked with vinegar - 0.5 tsp. (can be replaced with baking powder - 1 tsp).
  • Vanillin.

Cooking technology:

  1. Take the oil out of the refrigerator, keep it at room temperature for 1 hour.
  2. Grind it with powdered sugar until white.
  3. Beat in the egg, continue grinding.
  4. Soda extinguish with vinegar, it is even better to use ready-made baking powder.
  5. Mix baking soda/baking powder with flour and vanilla, then combine everything together.
  6. Put the resulting stiff dough into a bowl sprinkled with flour.
  7. Cover with cling film and refrigerate for half an hour.
  8. Roll out quickly, cut out mugs with a suitable glass.
