Useful information from the confectioner @galaart_cake
"Oh, how much we confectioners often get extra tools in our favorite confectionery stores)
Don't feed bread, let me buy another dye 105 pink shade, or 10 heart molds - never without using the first 9😏 And about sprinkles, kandurins, sequins, molds, rugs and other tinsel, I generally keep quiet 😤
Yes, yes, you won’t believe it, but a pastry chef is not a profession - it’s a diagnosis 🤤
But believe me, he is treated with experience)) So, in order not to initially acquire mountains of unnecessary tools and then not cry to your husband about a small kitchen and lack of working space, you just need to learn to separate the important from the secondary!
Let's start probably)
So, what is useful for a novice confectioner in his hard work initially:
✅ baking molds: round extendable from 16-30 cm and square extendable of the same dimensions ✅ Acetate tape:
For increasing the height of the mold, assembling mousse cakes
✅ leveling spatula: one wide and one narrow
✅ turntable: convenient when leveling and decorating
✅Food coloring: basic set of 5 colors, plus black, white, brown
✅Pastry disposable bags
✅Pastry nozzles: basic 3, Wilton d2, m1, c1
✅mastic iron: smoothing when tightening ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
✅Scalpel or cutter for working with mastic
✅Silicon or plastic rolling pin
✅Set of stacks for working with mastic
✅Mixer: manual or stationary
✅Silicone spatula
✅Kitchen scale
You can also use a plastic sheet to roll out.
For the first time, and not only for the first time - these are the most basic things for a confectioner!!! And everything else, of course, will also be bought, but it will definitely be needed for a certain order, and not just because my eyes ran wide 😅😉❤️

Top flavors for children, men and women
Let's talk about preferences 👍👍👍 Some useful information from confectioner @ngolubcova
So let's go!
✳️ CHILDREN: 👫
The most "difficult" but honest audience. They will not eat something sophisticated. They like simple, understandable tastes and combinations, as well as chocolate, but NOT bitter
🔹 Club-Malina, Vanil, Mascarpone-berry seal (like it all without exception) 💯
🔹 Tropical cheesecake-mango-markeia-ananas in the mousse Kremikiz
🔹 Praga (especially boys)
🔹 MORROVIC
🔹 MEDICAL MANDARINA not all) ✳️
MEN: 👱
They like chocolate flavors, sand, caramel and the so-called "meat cakes" (where there is a lot of biscuit and heavier cream). Like children, they like simple combinations
🔹Berry fresh (it's not strange, but blackcurrant in combination with sand is very popular with men!) 💯👌
🔹Tartlets: Apple-cinnamon-caramel and "Black Russian"
🔹Chocolate tangerine
🔹Raspberry truffle - raspberry and chocolate
🔹 Brownie Cherry
🔹 Cappuccino. Caramel-coffee cake
🔹 Berries, vanilla, mascarpone ✳️

Confectioner's tools. Tips for beginners | Confectionery School
What should be in the kitchen of every woman who loves to bake cakes ? When you just want to learn how to bake cakes or desserts, then a little chaos arises in your head: what dishes to buy, what ingredients should be, how to cook, and the like. To help novice confectioners make a pleasant start and avoid stress, I wrote a short article about What pastry chef tools should be in every woman's kitchen. It will help you cook easier and more fun, save some of your precious time and money.
Watch a short video review by Irina Ogurchenok. Below is a list of required tools.
Home confectioner's tools
Apron
The main rule in the kitchen is maximum cleanliness and order. And cleanliness begins with the confectioner. An apron is an indispensable attribute for any cooking, so we start with it.
No matter how carefully you cook, stains from the ingredients will somehow appear on the clothes. You don't want to ruin your favorite item! Therefore, be sure to purchase a simple apron.+
Immersion/Hand Mixer
In my confectionery practice, I use a stand mixer more often than a hand mixer.
If you can afford both, be sure to buy both the stationary and manual. When you have large volumes, then you can not do without a stationary professional mixer.
For a beginner confectioner, an ordinary manual pastry will be enough. It is ideal for quick mixing of ingredients: for example, when making cream and mixing dough.+ 9Ol000 is everything, and a small mistake can lead to unpleasant consequences.
Most housewives use glasses to measure the ingredients for their meals, but everyone's glasses are different. Therefore, there is a big risk of getting the wrong taste that was originally indicated in the recipe.
Among all the variety of pastry equipment, the scale is the most used tool in my kitchen. I highly recommend it to every pastry chef and simple housewife! They are inexpensive, but the benefits are great!
I have had different kitchen scales of different brands. Now I use a simple model from Ikea.
Timer
There are always timers in my home kitchen and in the kitchen of the Pastry School.
Baking biscuits, preparing creams should not only be guided by the appearance, but also by time. For this, kitchen timers were invented, which will help out when you need to note the time. +
Bakeware
These can be either round molds, molds with a removable bottom, just rings.
You should have several shapes in your arsenal, both different in diameter and different shapes: round, oval, rectangular, figured, for cupcakes and tartlets.
This will allow you to diversify your baking and be a more versatile home baker, which means that you will delight family and friends with a variety of baking forms.
Also, having different sizes of dishes, you can cook for a different number of guests. If there are few guests planned, then why take a large uniform. If there are many guests, then a large size will be used. In general, there are never too many forms! +
Silicone baking mat
Silicone mats can be used instead of baking paper.
They are also ideal for rolling out cake dough, pie dough, pizza dough and more.
The bottom of my desserts always bake evenly and they come off the silicone sheet very easily. After cooking, you do not need to wash the baking sheet, and the silicone mat itself is easy to clean.
Whisk
As for whisks.
Sometimes it is easier and faster to use a whisk than a mixer. A whisk is needed in such cases when in a recipe you just need to combine something, but not mix completely.
In addition, if a mixer is not available, a whisk is a good alternative. It just takes longer to stir.
The quality of the finished product, of course, will be worse, but it is better to cook this way than nothing. When buying, make sure that the whisk is of high quality. You can just break it if you beat heavy ingredients.
Silicone spatula
I use it for everything from shaking and mixing, to scraping cream off the sides of the bowl, spreading frosting, cooking, etc. keeps and does not spoil a surface of ware thanks to soft contact, does not create noise during the work.
There are one-piece blades, and some with a removable handle. I did not find a practical use for a removable handle, so I recommend buying a whole blade right away.
Blades also come in different degrees of hardness. A silicone spatula will definitely come in handy!
Rolling pin
There is not much to say about the rolling pin. Its role in baking is obvious.
The only thing worth noting is the materials of manufacture. Rolling pins are wooden, plastic, silicone. It is better to purchase a plastic version, but only from a very good material - do not cheap.
Cheap Chinese plastic can contain both odor and harmful impurities.
Wooden rolling pins are also good, but they have a few drawbacks: they absorb fats, odors and deteriorate over time.
Pastry bag
The pastry bag sounds scary and new, but it's actually a simple and important tool.
With it, you can decorate cakes and desserts, as well as give different shapes and flavors to desserts.
True, you will have to learn how to work with it a little, but this is a matter of practice. Confectionery bags are both disposable cellophane and reusable from a special fabric. I am a fan of disposable bags.
Mixing bowls
Mixing bowls are essential for mixing and storing various ingredients while baking.
Ingredients can be different: dry mixes and liquid components.
Each ingredient should have its own container. There is no such thing as a lot of dishes, and that's true!
Measuring Cup
One way to measure liquids is with a measuring cup.
At least one beaker is required to determine the volume of liquids. I have different measuring cups - each is convenient in its own way.
These glasses are usually graduated in grams and milliliters. This allows the glass to be used for both liquid and bulk products. It is convenient to have different sizes depending on the recipe.
If you don't have a measuring cup, then the liquid can be measured on the scales, but not always the weight corresponds to the desired volume - remember this!
Sieve
Some recipes call for sifting dry ingredients such as flour, powdered sugar and cocoa powder.
