I was in the mood for PB&J but didn't have any bread at home to make a sandwich so I decided to make cookies to satisfy my cravings PB & J.

No bread? No problem

When all else fails, I move on to making cookies.

These unbaked fingerprints remind me of the fingerprint cookies my grandmother used to enslave before Christmas every year.

Except it took me 10 minutes to make these fingerprints, they don't need to be baked and are vegan and gluten free.

There is no slavery.

Sometimes you run out of bread, which is good, because you can eat cookies instead of bread when the passion for PB & J comes.

And cookies are better than bread.

I literally turned a couple in my mouth a few seconds after the photo shoot was taken.

Peanut Butter and Jelly Fingerprint Cookies (Baked, vegan, gluten free)

Makes 10 to 12 small cookies or 6 to 8 large cookies

Peanut butter 1/4 cup (I used branded creamy peanut butter, cheap, not "natural",*)

1/8 cup butter, softened (2 tablespoons) - or margarine, Earth Balance or similar if vegan

1/4 cup brown sugar

1 tablespoon white sugar

1/4 cup powdered sugar

1/4 teaspoon cinnamon

1 teaspoon vanilla extract

1/4 cup all-purpose flour (For gluten-free flour, use a gluten-free mix of your choice, such as almond/oatmeal/peanut/rice flour)

pinch of salt, optional

1/4 cup jelly or to taste (I used strawberry jelly; or used grapes, apricots, or your favorite jelly, jam or jam)

In a small bowl, beat peanut butter and butter until creamy . I did it by hand, but you can do it in a mixer if you like. free: Microwave the peanut butter and butter in the microwave for 15 seconds, taking care not to melt them, just soften them and they will blend more easily. Add sugar and beat until smooth. Add cinnamon, vanilla extract, salt, flour (add flour slowly if you need a little less than the recipe calls for), and stir until combined.

At this point the dough should be easy to work with and bally, but if the dough is dry or crumbly and not sticky, add another touch of peanut butter and mix until desired consistency is achieved. On the contrary, if the dough is too wet or sticky, add a little more flour. Also, chilling the dough in the freezer for 10 minutes or in the refrigerator for 20-30 minutes before forming into balls can be helpful if the dough is slightly damp or sticky.

Once the dough has reached the proper consistency, roll the dough into shapes the size of a 1-inch golf ball. After rolling the balls, pump the tips with your thumb, making a jelly well. After making a well, I lifted the sides of the cookies, "pulling" some of the batter, making sure the cookies weren't too shallow to properly contain the jelly. Treat the dough like clay and shape the shapes and sides as you see fit. Then fill each well with approximately 1-1.5 teaspoons of gelatin.

Store supplements in the refrigerator for several weeks or in the freezer for up to 3 months for long term storage. I've successfully stored batches of unbaked cookies and cookie dough balls in the freezer for many months, but I do what I think is best and use common sense.

Notes: Someone will probably ask me if you can make them with almond butter, cookie butter, cashew butter, sunflower oil, or an alternative nut or butter spread, and the answer is yes; But you may need to play with the ratio of dry ingredients (increase them) since most other nut butters tend to be thinner than peanut butter and you will need more dry ingredients to get the dough to come together.

* I recommend using unnatural peanut butter. Something like Jif, Skippy or similar. Peanut butter, which separates into a solid and an oil, is not recommended for these cookies.

Raw cookie dough, especially the peanut butter variety, is always welcome. Fingerprint peanut butter dough is one of my favorites by far.

This is a sweet, full-bodied peanut butter aroma, and the vanilla aroma is prominent.

I love vanilla and it gets lost in a lot of recipes, so I almost always double the amount if I'm following someone else's recipe. And while the peanut butter has a strong flavor, the vanilla isn't completely gone.

Gelatin is not wasted either.

I made sure to fill the biscuit cavities to the brim with jelly.

Okay, I filled the jelly One a little higher than flush with the biscuit lids. I'm in a cookie streak that's overflowing and overflowing lately.
