Description and botanical characteristics

Indian sesame, or common sesame, or eastern sesame (lat. Sésamum índicum) is a species of annual herbaceous plants of the genus Sesame (Sesamum) of the Pedaliaceae family.

In culture, mainly Indian sesame is common. The root of sesame is taproot, penetrates the soil to a depth of 1 m. The stem is erect, up to 1.5 m high, pubescent with soft hairs. Leaves are petiolate, alternate or opposite, with a pubescent blade. The shape of the leaf depends on its position on the stem. In some varieties, all the leaves are whole, the lower ones are large and wide, decreasing upwards, in others the lower leaves are dissected, while the upper ones are whole, narrow lanceolate. The flowers are of the five type, arranged 1-3 in the axils of the leaves, sitting on short pedicels. The color of the corolla varies from white and pink to purple. The calyx and corolla are pubescent. Sesame is a self-pollinator, but cross-pollination by bees is also possible.

The fruit is an elongated pubescent capsule, consisting of two or four carpels. It contains 70 - 80 seeds. Seeds are small, flat, white, gray, brown or black. Weight of 1000 seeds 3 - 5 g.

Sesame seeds are used as a seasoning in cooking, in the confectionery industry and for the manufacture of sesame oil. The percentage of oil in sesame seeds is very high. Depending on the area of ​​cultivation and variety, they contain up to 60% fatty oil and up to 20% protein.
